I'll throw out a couple off the top of my head:

Blues Before Sunrise - I couldn't believe this was EC the first time I
heard From the Cradle.
Don't Think Twice - as much passion in the singing as in the great
guitar solos from the Dylan Tribute.
Five Long Years - could be many versions but I love the Hyde park 1996
one with it's great solos.
