Boy, you know this woodcarver is experienced when she lives in NYC, but
still knows how to boil the skin of a cypress knee <BG>.

You can carve a cypress knee either wet or dry but I would try it a bit
dryer. You can boil the cypress knees in order to remove the skin/bark
easier. Boil it and as soon as it is cool enough to be handled but
still fairly hot, you can simply peel the bark off. Let most of the
moisture dry up and then go to town. They are wonderful to carve.
