Hi Bill,
Agree, I am facing a formidable challenge for sure. The latest (April-June) of The Arrow has nice photos/drawings of the station in Prichard. The concrete work, while still a challenge, would be doable in wood. I am pretty handy with a scroll saw. The metal work would be a bear.
That same Arrow had a rendering of a company house. I have built small wooden kit structures and, while not a pro, have learned enough on how to build those reasonable well.
All of that said, I don't back down from challenges, so once I complete the Gloor Craft tipple, I will probably tackle a coaling station. I will look up those references you provided.

I wish I could help you with drawings, but I don't have any. You may have to pick a prototype version and scale something from photos that fits your scale and layout.
Putting aside the big facilities at Norfolk, Roanoke, Bluefield and Williamson, there were a number of concrete structures between those endpoints: Vicker/Walton, Farm, and Iaeger. They were of different sizes and complexity, with the one at Auville Yard, Iaeger, being the least complex. Having said that, the basic structures were each straightforward, but the steel "rigging" of each was complex, and would be a challenge even in HO scale.
There was a smaller facility at Shenandoah, VA, but the "rigging" was very complex.
The volume "The N&W As I Knew It", published by the Society, has photos of Vicker (page 98) and Shenandoah (page 136). I don't have photos of Auville or Farm at hand, but they are around.

David Baker has graciously invited us all to a tour of his fabulous layout
via Zoom. I will set up a Zoom session for Sunday evening, September 21st
at 8:00 p.m. to facilitate this event and send it out a little closer to
time Please plan to attend as I think you will enjoy seeing what David has
done and his methods and techniques for doing some really beautiful work.

In addition to searching the NWHS online Archives, I would recommend
two books, both written by Thomas Dixon and published by TLC:
"Steam Locomotive Coaling Stations and Diesel Locomotive Fueling
Facilities"
"Steam and Diesel Locomotive Terminals and Service Facilities"
Both break down facilities by type (wood coaling stations, concrete
stations, etc...), and feature plenty of photographs and drawings,
including N&W prototypes.

I am currently building a Gloor Craft (1980's vintage) N scale
coaling tower. As this is not N&W specific, I assume I cannot enter
the modeling contest at a convention. That said, all the photos I have
seen all appear radically different; therefore, if there is a book or
resource of all of the N&W/Southern towers/tipples, perhaps the Gloor
Craft model might be a close approximation of one.
Assuming not, I would like to model a tower of a N&W or Southern
prototype tipple/tower. Digging around the archives, I found little
that could help me. I obtained an old Model Railroader booklet on
coal, however once again with the exception of a few photos, not much
use.
Could you gentlemen point me in the right direction? As this is in N
scale, I am hoping I can find something not too detailed (but detailed
enough). Am I on a fool's errand?

Searching the archives can be a bit touchy, and not always what you expect to find with your search terms. These probably are not every possibility, but may help narrow it down.
There are some excellent drawings available in the Archives on these things.
Just so you know, I am not including a coal tipple in the search, as a tipple refers typically to a coal company facility for loading hoppers, not locomotives.
But if you search for it, you can find some interesting facilities there as well.
